Ingredients:

  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano leaves (1/4th teaspoon fresh)
  • 1 pound penne rigate or other tubular pasta

Using a large pot, bring the broth to a boil, then reduce heat to low and simmer for about 10 minutes. In another large skillet over medium-high heat, heat the oil until hot. 

Add the onion and garlic and cook, stirring, for about 5 minutes or until the onion is softened. Add the oregano and cook for 1 minute more. Add the pasta and vegetable broth to the skillet and stir to combine. Bring to a boil, then set the heat to low and simmer for about 15 minutes or until the pasta is cooked through.

Fettuccine with Bacon and Tomato Sauce

Ingredients:

  • 2 tablespoons olive oil
  • 1 pound bacon, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • Salt and pepper to taste

In a large pot, cook the bacon over medium-high heat until crisp. Remove from heat and add the onion and garlic; cook, stirring, for about 5 minutes or until the onion is softened. Add the diced tomatoes with their juice, salt, and pepper, then bring to a boil. 

Reduce heat to low and simmer for about 10 minutes. Add the fettuccine noodles to the pot and stir to combine. Allow to boil, then lower the heat and simmer for about 15 minutes or until the pasta is cooked through. 

Spaghetti with Tomato and Garlic Sauce

Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cans diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil leaves (1/4th teaspoon fresh)

In a large pot or using a Dutch oven, cook the onion over medium-high heat until softened. Add the garlic and cook, stirring, for about 5 minutes or until the garlic is softened. Add the canned tomatoes with their juice, tomato paste, basil leaves (or 1 teaspoon salt), and salt and pepper to taste. 

Bring to a boil, then lower the heat and simmer for about 10 minutes. Add the spaghetti to the pot and stir to combine. Bring to a boil, then put on low heat and simmer for 15 minutes or until pasta is al dente.

Rigatoni with Garlic and Tomato Sauce

Ingredients: 

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cans diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil leaves (or 1/4th teaspoon fresh)

In a large pot, or you can use a Dutch oven, cook the onion over medium-high heat until softened. Add the garlic and cook, stirring, for about 5 minutes or until the garlic is softened. Add the canned tomatoes with their juice, tomato paste, basil leaves (or 1 teaspoon salt), and salt and pepper to taste. 

Bring to a boil, then put the heat to low and let this simmer for about 10 minutes. Add the rigatoni noodles to the pot and stir to combine. Bring to a boil and lower the heat to let it simmer for about 15 minutes.
